Hello, as I say in the title, I have some in my fridge but I have no idea to cook or do with them. They don't have to cook together (I don't mind two of them cook together).

By the way, I plans to lose some weight so I need something healthy and low in fat if possible. Thanks.

I have no recipe, but you could cook the potatoes, mash them with the polenta and goat's cheese and some herbs, and fry them them in a pan with just a little olive oil turning them into burgers?

i can't help you with the goat cheese, but just want to send you over to www.fatfreevegan.com and her blog at www.blog.fatfreevegan.com which is updated very frequently. Susan's recipes are awesome! Go search out some polenta recipes there. She won't have any real cheese recipes on there, so you may want to look at www.vegetariantimes.com which is the website for the magazine. They have both veg and vegan recipes, but you'll find good quality recipes there at least.

Good luck and welcome!

I did look around at www.fatfreevegan.com once but never give it a thought, going there to check it out. Thank you!
