A few years ago, I tried to duplicate my favorite H&S soup recipe without any luck. I may have made a thread about it, but I can't remember. All of the ones I made tasted like sesame oil, every pot was dumped down the sink. They were terrible. They also all came out a yellow-ish color, the one I like is dark brown.<br><br><br>

What makes it so dark, the mushrooms? The broth? I would omit the dark mushrooms, would it change the flavor profile of the soup? I usually eat around the worm looking mushrooms. The tofu and bamboo shoots are delicious. Help please!!

I wonder the same thing about the miso soup I've had from restaurants (I hate it when I've made it at home).<br><br>
The darkness might be from soy sauce or mushroom stock idk. You can always try asking the restaurant, but they can be dicks about that sort of thing (revealing ingredients).
