So, my birthday is coming up and I was planning to make the banana split cupcakes from Vegan Cupcakes Take Over the World. I made them last year and loved them, so I was really looking forward to making them again this year. Unfortunately, the local small-town grocery stores are not cooperating. They were completely sold out of pineapple preserves.<br><br>
I have all of the basics for it (the flour, extracts, shortening, bananas and such) but without the pineapple preserves I feel kind of stumped. I do have other fruit preserves (peach) and I do have regular old crushed pineapple. Any way I could improvise with either of these to make the cupcakes work still?

I definitely think you could use the peach, although it will most likely alter the taste a bit.<br>
I also think you can cook the crushed pineapple on the stove with a little bit of cornstarch/arrowroot...it will thicken it up so the consistency will be more like preserves.

Thanks for the suggestions. I'll try thickening the crushed pineapple with cornstarch and see how it goes. <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D">
