I've been veggie on and off with lots of slip-ups over the last year. I obviously haven't fully committed yet, but I really want to.<br><br><br><br>
Last night my meat-loving boyfriend told me that he'd be interested in eating mainly vegetarian foods with me IF he liked them. I'm not really much of a cook, although I can follow a recipe. For main courses, I mostly eat beans, pureed vegetable soups and masala chick pea or lentil dishes. He doesn't like ANY of these. He does like it when I make pasta with TVP, stir-fries or minestrone soup.<br><br><br><br>
Any ideas for really tasty vegetarian meals? I think that it would be really nice for us to do this together and I can't fault the guy for not loving rice and beans. I don't want to depend on fake meats as we're on a pretty tight budget right now.

It's hard to say without knowing what your boyfriend likes.<br><br><br><br>
Try thinking of foods he likes that don't focus around meat, and you can probably come up with a vegetarian version he will love.<br><br><br><br>
My husband loves meat replacements. He needs hearty, hot foods (no salads for him!) So he likes...<br><br><br><br>
Shepherd's pie using soy turkey<br><br>
Veggie burgers with carmelized onions and mushrooms<br><br>
Pasta fagiole (bits of pasta with butter beans, cannelini and garbanzo beans in a vegetable broth with garlic)<br><br>
Pasta with marinara sauce with meatballs made from TVP or soy<br><br>
Vegetable curries over rice<br><br>
Red rice & beans (he's hispanic and that's a vegetarian-by-accident "comfort food")

From what I've heard "<a href="http://www.robinrobertson.com/Meat_and_Potatoes.htm" target="_blank">The Vegetarian Meat and Potatoes Cookbook</a>" might be up his alley.

I've been having good luck with tacos and burritos made with morningstar farms crumbles. I just dice and saute some onion in olive oil, add crumbles a can of pureed tomatoes (I use a quart of the ones we can at home), I add salsa, chili powder and cumin. (I'm going to try to substitute lentels for the crumbles)<br><br><br><br>
Chili, same basic beginning add beans and corn if you like.<br><br><br><br>
My kids go crazy over stir frys. Lots and lots of veggies, bean sprouts, Braggs Liguid Aminos for flavor, served over brown rice. My boys like to put those little crunchy chinese noodles on top. It gives it a nice texture.<br><br><br><br>
Veggie soup, I just start with a pureed tomatoe base and add tons of veggies serve over noodles w/ homemade bread and a salad.<br><br><br><br>
Pizza: I like to use the frozen bread dough or french bread loaves cut length wise. I just use a jar of organic spaghetti sauce and spice it up with basil and oregano and cheese and vegetables (peppers/onions/olives) for no sauce type broccoli/chedder, spinach/mushroom/ricotta, refried bean/salsa/olive. Obviously, we still eat cheese here, you could do w/o it of course. A fast way to get your bread dough to rise: set oven to 200 degrees, boil a pan of water. Turn off the oven and put the pan on the bottom rack. But the frozen bread dough on a cookie sheet (I olive oil the top) and let it rise. After it has risen, I flatten it out to cookie sheet size and bake for about 10 minutes of 425 degrees (olive oil the top). Then I put my pre cooked topppings on it and bake until they are hot and bubbly.<br><br><br><br>
I have kids so these have been the favorites. I've been trying to keep things "fun" to get us through the transition from meat to veggie.<br><br>

Who doesn't love taco night?? Yum! Just wanted to add that tossing them, tightly folded, into a hot lightly oiled pan and browning both sides of the taco make them even better <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">
