My daughter is working 6 days a week and only has 15 minutes for lunch. She has been eating nothing but ramen since it's quick and she isn't much of a cook. I wanted to make her about a weeks worth of somewhat nutritious lunches.

So far all I can think of is a precooked baked potato with veggies that can be warmed up in the microwave pretty quickly. Possibly rice and veggies too. Other than that I'm drawing a blank.


I will be premaking these, so they need to be able to stay good in the frig or freezer for about a week.
She isn't into tofu at all.

What a nice mom you are!
Hummus is great w pita and raw veggies. Peanut butter sandwiches, yum. Avocado, tomato, alfalfa sprouts and red onion in a pita or as a wrap. Bean wrap, or refried beans and rice. Bean burrito. Tomato or green pepper hollowed out w good stuff crammed in w the chopped up tomato center, like yesterday's rice and vegs, rice and beans. Salads are always good, and fruit every day
Veg sushi rolls are easy to make, also. Have fun!
