Need creative ideas for simple vegan "bowl" dinners

Hi all,

I'm trying to get back to eating vegan and sticking with whole foods (so no prepackaged stuff like veggie burgers, veggie hot dogs, veggie crumbles - you get the idea
). I'm a grad student with very little time to cook so I tend to make one-meal stuff that's quick and easy (like bean burritos and smoothies).

I'm really into the "bowl" things where you throw together veggies, beans, grains, and spices and cook in the microwave but I'm not very creative when it comes to combinations. So far I have a Mexican-inspired one with black beans, mushrooms, and quick-cooking brown rice thrown together and heated in the microwave, then has salsa added for flavor; and an Italian-inspired one with chickpeas, broccoli, and couscous with Italian spices thrown in.

So I need help with some creative combinations of beans, grain, veggie, and spices to add variety.

Any suggestions?

I like rice noodles, ( the kind you buy in the asian section), with stir fry veggies, chopped peanuts, and peanut sauce ( can be jarred, or homemade, just check labels to be sure they are vegan)

I also like using sweet thai chili sauce for a sauce, and taco sauce for these types of meals. I throw in a starch a bean, veggies and a sauce. It has been my current favorite meal for lunch for about a month now

rice, seasoning for chicken (it doesn't have chicken in it!), tofu or seitan, shredded carrots, snow peas.
Quinoa, broccolli, tofu, peppers, bean sprouts, green curry paste and some soy sauce.

Rice or rice noodles, fake unbreaded chikn' strips, some veggies, peanut satay sauce. Serve with some chopped peanuts, a wedge of lime and bean sprouts.
rice, tinned tomatoes, tofu, parmesan cheese

soba noodles, sesame oil, rice wine vinegar, sesame seeds, chopped carrots and cucumber.
