so i like things that are easy.<br><br><br><br>
when i looked at the back of my peanut butter jar and saw cookies with three ingredients, i thought i'd give that a try.<br><br><br><br>
1 cup PB, 1/2 cup sugar and one egg<br><br><br><br>
I wanted to make it vegan, so instead of one egg i used a half a banana.<br><br><br><br>
they turned out terrible! i thought banana's were a good substitute when baking? maybe i should have used egg replacer?

I don't understand how the recipe would've worked with the original ingredients (peanut butter, egg, and sugar). The egg must've been intended as a binder. Did your cookies just run all over the place and become a pile of oil and dry crustiness?<br><br><br><br>
I think what the egg acts as in that recipe is a binder. Bananas don't bind. Try using some ground flaxmeal. Combine a couple of tablespoons of flaxmeal with 4 tablespoons of warm water (I am guesstimating big time here). Use a fork to stir the flaxseed for a while until it gets nice and thick, or blend it with a hand blender. Blend it with your peanut butter and sugar, then form cookies and bake it. Let me know how that turns out.

Just keep trying different things. Frankly, I don't think cookies really need egg because they are flat and small anyway. (it doesn't matter if they fall apart)<br><br><br><br>
I have experimented a lot with baking without eggs and have found that often ground flax seeds whipped with water or egg replacer work the best for me.

thats so odd! i read on a site somewhere that a half a banana was a good replacement for baking... maybe it was more for breads and things.<br><br><br><br>
i actually have some egg replacer here, but i was thinking that PB and banana would taste better <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D">

I've baked lots of cookies without eggs or replacer and it worked out. Mostly because I'd start baking before I checked to see if we had all the ingredients, and I'd always end up realizing we didn't have eggs, but I'd keep going <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p">

Eggs serve different purposes in different foods. In some foods, they're added for moisture. In others, like it sounds like with these cookies, they're added as a binder.<br><br><br><br>

I tried that recipe a few years ago, with an egg and they tasted awful too. They never baked properly, it was like eating PB out of the jar lol <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p">

I have made that recipe in the original form quite a bit in the past. They are very popular in my house. I even added chocolate chips in the past to make them special. I find they work best with brown sugar. I haven't tried to make them vegan style yet.

i used to work in a group home where a woman made them that way all the time and they were really good! but that was years ago when i was eating eggs.<br><br><br><br>
lol it was that site that i got the info off of. i was looking at the egg replacer and since it said it was good for things that should be crispy, i went to the next option bananas which it said was good for baking <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D"><br><br><br><br>
I might try it again sometime...

I think you need a new PB cookie recipe because PB + sugar + binder does not really equal cookies. Do you have Vive le Vegan? The one in there is my favorite recipe. Or you could get one from vegweb that is highly rated.
