Mint Cookies<br><br>
Category: Desserts - Cookies<br><br><br><br>
Suitable for a: vegetarian diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
18 ounce sugar cookie dough (roll or homemade) sliced 1/4 inch thin<br><br>
14 ounce pack of chocolate mint candies<br><br>
1 egg, beaten<br><br>
1 tbs chopped walnuts or pecans<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
Preheat your oven at 375<br><br>
Slightly grease a cookie sheet<br><br>
Place slices of sugar cookie, 2-3 inches apart<br><br>
Top each cookie with a mint candy<br><br>
Cover with another 1/4 inch of sugar cookie<br><br>
Brush egg over each cookie<br><br>
Press walnuts/pecans into top of cookie (gently!)<br><br>
Bake in oven for 10 minutes<br><br><br><br><br><br>

My mom made these for Christmas last year and everyone loved them. Keep in mind that not all candies are vegetarian so read the ingredients carefully.
