Minestrone soup YUM!

Suitable for a: vegan diet



1 can of pinto beans, drained

1 medium onion chopped

1/3 small head of cabbage chopped

1/2 cup frozen peas/carrot mixed

1/2 cup of frozen corn

5 cups water

1 can of tomatoes (do not drain)

1 large potato diced

1 cup of cooked rice

1/2 teaspoon of dried thyme

1/4 teaspoon of basil

1 tablespoon oil

5 teaspoons better than bouillon veggie flavored



In a large pot, add 1 tablespoon of evoo or oil of your choice, add chopped onion and cook until transparent. Add peas/carrot mixture, corn, cabbage, cook over medium heat until veggies are softened about 4 or 5 minutes. Stir in water, tomatoes (undrained), potatoes, rice, salt and pepper to taste and better than bouillon veggie flavored (or your choice of bouillon) and pinto beans. Bring to a boil, then reduce heat to simmer, cover lightly and cook for 1 hour.

This makes A LOT! It is one of the best soups I have made. Try it and let me know what you think. Here is a photo of the finished soup.
