Minestrone soup YUM!<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
1 can of pinto beans, drained<br><br>
1 medium onion chopped<br><br>
1/3 small head of cabbage chopped<br><br>
1/2 cup frozen peas/carrot mixed<br><br>
1/2 cup of frozen corn<br><br>
5 cups water<br><br>
1 can of tomatoes (do not drain)<br><br>
1 large potato diced<br><br>
1 cup of cooked rice<br><br>
1/2 teaspoon of dried thyme<br><br>
1/4 teaspoon of basil<br><br>
1 tablespoon oil<br><br>
5 teaspoons better than bouillon veggie flavored<br><br><br><br><br><br>
In a large pot, add 1 tablespoon of evoo or oil of your choice, add chopped onion and cook until transparent. Add peas/carrot mixture, corn, cabbage, cook over medium heat until veggies are softened about 4 or 5 minutes. Stir in water, tomatoes (undrained), potatoes, rice, salt and pepper to taste and better than bouillon veggie flavored (or your choice of bouillon) and pinto beans. Bring to a boil, then reduce heat to simmer, cover lightly and cook for 1 hour.<br><br><br><br><br><br>
