Its been a couple days since I first made this, so I hope that I get it right.

Suitable for a Vegetarian Diet (Could be made vegan by omitting cheese)

1 large white onion

1 bag of frozen mock ground beef (boca or morningstar farms or whatever you like)

1 can of black beans drained

1 can of corn drained

2 cans of Rotel (whatever spice level you like)

1 19 oz can of a vegetarian enchalada sauce

1 handful of chopped cilantro

1/2 cup black olives

2 jalapeno peppers

corn or flower tortillas

8 ozs shreaded cheese (or vegan option)

1 tablespoon cumin

1 tablespoon chili powder (adjust to your taste)

salt to taste

Heat oven to 350. Line a greased baking pan with tortillas. Saute diced onions and jalapenos. Add the frozen mock meat. Saute until cooked thru. Add beans, corn, tomatoes, black olives, cilantro and all but 1/3 cup of the enchalada sauce. Heat thru and add seasonings. Place 1/2 of cooked mixture in the tortilla lined pan and top with another layer of tortillas. Add the remaining mixture and top with tortillas. Spread the 1/3rd cup of enchalada sauce over the top and then top with shreaded cheese. Cover with tin foil and bake for 20 minutes. Remove tin foil and bake for an additional 10 minutes.

We served it with Tofutti sour cream and saffron rice. Omni boyfreind, stepmom...and the ultimate...omni teenage boy all loved it. Enjoy!
