so, i'm kind of new to this veg thing, and was wondering, just so i can get some ideas, what did everyone eat today?

as far as what i ate...

breakfast:

cookies (i know, not very healthy, but i ran out of cereal yesterday)

green tea

lunch:

Cuccumber and dill hummus w/wheat pita bread

a slice of raw cabbage (not quite sure why, but it just looked good sitting in my fridge, so i had a bite)

Dinner:

rice and veggies from the local chinese place

and now i'm scrounging for something sweet... maybe some peanut butter on pita bread... sounds good huh? or a slice of my roomies chocolate cheese cake, even better!

I had spaghetti with fake meat balls for breakfast. And for dinner I had a tofu roast. I think in I'm going to make lemon bars before my mom goes to sleep.

Keerli: How do you make the vegetable pakora? It's Indian, right? I love Indian food.

first i chop up 2 or 3 cups of veggies, whatever i have on hand, into 1/2 or 1/4" pieces. tonight, for instance, it was an onion, 2 potatoes, and three peeled stalks of broccoli.

then in a bowl i combine about 3 cups of chickpea ("chana") flour, about 2 tsp baking powder, some salt, some whole cumin seeds, and some cayenne pepper and mix well. i rub about 3 tbsp of oil into the flour until it's all mixed in. then i stir in enough water to make it into a medium-thin batter (about the same as pancake batter). then i toss all the chopped veggies in, and stir it up. i also added a couple of handfuls of cashews.

in a deep pot i heat about 4 inches of vegetable oil to 350F. then i drop spoonfuls of the batter-veggie mixture in, and let them deep fry for 3-5 minutes, turn, and deep fry on the other side for 3-5 minutes. then i drain them on paper towels and serve with a tamarind sauce or sweet chutney.

i often just eyeball the batter and taste it to check the saltiness and spiciness, so i can't promise the amounts i gave are exact.

it's kind of hot and messy work but worth it, once in a while.

umm spagetti and meatballs for breakfast? that's just wierd

i had a pb&j sandwich for breakfast/lunch (slept late) and snacked on some peanuts later with a diet vanilla coke to drink. then dinner was noodles with olive oil and fried garlicy veggies and vegan parmesan. mmmm. also made some oven fries and hot cocoa at about midnight.

breakfast:

cereal (shredded oats) with soy milk and flaxseeds

fortified OJ

lunch:

pita stuffed with gardenburger, lettuce, and onions

lentil and carrot soup

brown rice

dinner:

stir-fry with tofu and lots of yummy veggies

brown rice

and i just ate half of a frozen grapefruit. i don't know why i do that because i really don't like the taste of grapefruit yet i buy it every once in a while nevertheless. i guess i like a food that kicks my ass every now and then.

oh and welcome to the board and especially to veg*nism. it's a rough start in the beginning (man, i remember eating the same things over and over and over at the beginning. fake meat after fake meat after fake meat). but you'll get the hang of it. heck, i don't even eat any fake meat products anymore really.

p.s. learn to love mediterranean food if you don't already. most of it is veg*n and it's all delicious.

Lunch: Huge!! salad from sandwich place near work consisting of rice with vegetables & chick peas, mixed beans, tomato pasta, sweetcorn & the usual lettuce/cucumber/tomatoes etc. I don't know if I'll be able to manage my...

It's only 13:30 for me & I have no idea what's on the menu tonight so here's...

Last Night's dinner: roasted vegetable & salsa tortilla wrap with chips(fries for Americans) - I went out to a pub & ordered this & I was pretty impressed that I didn't have to survive on a bag of crisps all evening - although, the veg tasted more boiled than roasted IMHO but I won't complain!!

they were whole cashews. the 'raw' kind (though they aren't REALLY raw, they just label 'em that way). it was divine inspiration, tossing them in.

Yesterday I had flax flakes with banana and soymilk for breakfast, lentils and rice and a kiwi for lunch, a baked apple in the afternoon, and German potato salad (with tempeh bacon) for dinner. And lots of coffee in between!

Today I had flax flakes with raisins and soymilk for breakfast. Lunch will be lentils and rice. I have an apple and a grapefruit in my bag. I will probably cut up the apple and microwave it. And I might have some instant rice noodle soup this afternoon. For dinner, I'm having the rest of the German potato salad and probably a green salad too. And there may be something from Sticky Fingers vegan bakery thrown in there too. We'll see.

Peace,
