spiced lentils and rice, which got 15 votes! yay!<br><br><br><br>
please post the recipe ASAP, Herself! i'm sure everyone is as eager to give it a shot as i am!<br><br><br><br>
personally, i'd like to see all the other recipes that were submitted as well, especially that chickpeas a la king one, which got my vote! <img alt="" class="inlineimg" src="/images/smilies/wink3.gif" style="border:0px solid;" title=";)"><br><br><br><br>

I'm looking forward to this. I tried cooking lentils with veggies today and it wasn't very good. How long to we have to make this?

I want the chickpea a la king recipe, too.<br><br><br><br>
I'm also very excited to try the lentil recipe--I adore lentils but all I ever do with them is soup or spaghetti sauce.

The chickpea ala King one was mine and it is so yummy! I will post it soon but I am at work and the recipe is at home. I'm glad you all want to try it.<br><br><br><br>

Okay...so this is not all that healthy given the high fat content...but the lentils and rice are healthy! LOL.<br><br><br><br><br><br>
Spiced Lentils and Rice<br><br><br><br>
1/4 cup dried red lentils, rinsed<br><br>
1 bay leaf<br><br>
1 cup basmati rice, rinsed<br><br>
4 cloves<br><br>
4 Tbsp. "butter replacement" (Earth Balance is THE best)<br><br>
1 tsp. curry powder<br><br>
1/2 tsp. mild chili powder<br><br>
1/2 tsp. cumin powder<br><br>
salt and freshly ground black pepper<br><br><br><br>
Put the lentils in a large saucepan, add the bay leaf and cover with cold water. Bring to a boil, skim off any foam, then reduce heat. Cover and simmer for 25-30 minutes, until tender. Drain, then discard the bay leaf.<br><br>
Meanwhile, place the rice in a medium saucepan and cover with 2 cups boiling water. Add the cloves and a generous pinch of salt. Cook, covered, for 10-15 minutes, until all the water is absorbed and rice is tender. Discard the cloves.<br><br>
Melt the butter over gentle heat in a large frying pan, then add the curry, chili, and cumin powders and cook for 1 minute.<br><br>
Stir in the lentils and rice and mix well until they are coated in the spiced butter. Season and cook for 1-2 minutes until heated through. If you like, add veggies...I like to use broccoli.<br><br><br><br>
We have until May 31st to make this recipe. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

I have some spicy thai green curry paste in the refrigerator. Could I successfully substitute the paste for the powder? If so, would I use 1 tsp. of the paste? Thanks...

Just a suggestion, next month you may want to limit it to the first 10 suggestions. Having the voting spread over two threads couldn't have worked very well.<br><br><br><br>
Also, I think it would be awesome if each of you sent me a sample! Or at least posted a pic of it. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

LOL....good idea Michael! If I had a scanner...I would definately post a pic....but I don't.<br><br><br><br>
PixieMagic...if you used your Thai curry paste I'm sure it would be yummy..but it would have an entirely different flavor. Also, the powders and other ingredients used in the recipe make it an Indian dish as opposed to a Thai dish. If it's the prices of the powders that you're worried about, call around some health food stores to see if they sell them in bulk. Hopefully that's helpful. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

Instead of a butter replacement can I use olive or canola oil? that way the fat'd be healthy fat. I think.

Hey Corri! Of course you can make the recipe! <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"> If you use oil instead of a butter replacement...you might want to add a tad more salt to give it the extra flavor it might be lacking otherwise.<br><br><br><br>
