I've been living in Maine for the past 10 years (vegetarian for longer) and there's no getting escaping it - it's not the easiest state to be a vegetarian in, especially if you like to eat out. Not Montana bad, but bad enough.
In Maine, I've learned that you just have to be vocal. If there's nothing on the menu (other than the token 'garden salad') then don't hesitate to order something not on the menu. Order like a rock star. If you want pasta with broccoli with a little bit of olive oil, then just order pasta with broccoli with a little bit of olive oil. Just scan the menu to see what they have in the kitchen and then come up with something. Make sure you ask nicely and leave a big tip; they're bound to remember you the next time you go in. If you're a 'closet' vegan or vegetarian living in or visiting Maine... Hope you like Garden Salads.
I still think fondly of a trip I took a couple of years ago to visit a friend in a small town called Metuchen in New Jersey. I fussed over the menu and settled on ordering Pad Thai with no meat. She looked at me for a moment and asked me if I wanted the vegetarian menu. I almost fell out of my chair. A whole different menu, chock full with a virtual smorgasbord of pure happiness. NICE.
