Low carb

Hello I want to transition to vegan coming from a background of losing a ton of weight from paleo in a short amount of time but regaining from binge eating because it was not sustainable. My question is I read starch solution and tried to follow it and I'm always hungry but when I was eating low carb I was never hungry probably due to the keto effect. Is there any way I feel as satiated as the low carb because if not I just keep overeating. Thanks

Maybe you're not eating enough? Vegetables are a lot lower in calories than meat.

Are you trying to lose weight? As long as you are eating in a calorie deficit, you should be able to lose weight.
Try 15-20% fat for a few weeks, and see if it works for you. The most important thing is to eat in a calorie deficit.
Low carb diets can be very dangerous and it's also typical to regain weight quickly when you stop.

If you are vegan I suggest you eat nuts, pan fried tofu/stir fry, opt for non-gmo soy milk (highest in protein) and enjoy nut butters, bittersweet dark chocolate and things like avacado, in order to get protein and fats to feel satiated. You can put tahini on a dish or throw on some flax or chia seeds.

Then if you are concerned, go with "good carbs" instead of low on baked potatoes and yams, quinoa, brown rice, oats and other whole grains (like bulghar wheat, farina, or amarinth) and opt for sourdough or multi-grain seed breads instead of white bread and refined carbs.

Then of course eat veggies and fruits. You shouldn't feel hungry and none of this is "junky" or processed.

If you struggle with cravings, you of course can always try vegetarian meat analogues, they are not going to kill you, in fact some are healthier than others.
