Do you have a favorite recipe that you would be willing to share? I have sooo been craving some stuffed peppers & cabbage rolls lately, but haven't made them in ages and would LOVE some good vegan recipes for them.<img alt="" class="inlineimg" src="/images/smilies/hungry.gif" style="border:0px solid;" title=":hungry:"><br><br><br><br>
I'd be willing to use the morningstar crubmles OR diced tofu, or if you have a recipe that doesn't call for either, doesn't matter! <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D"> I'm open to any & all variations!!!<br><br><br><br>

Here is what I use.<br><br><br><br>
1 cup uncooked brown rice<br><br>
2 cups water<br><br>
2 tablespoons olive oil<br><br>
1 clove garlic, minced<br><br>
0.5 pound sietan (crumbled)<br><br>
1/4 cup lentils<br><br>
1 3/4 cups marinara sauce, divided ( homemade perfered but if you can find a good vegan one go for it)<br><br>
salt to taste<br><br>
ground black pepper to taste<br><br>
2 red bell peppers, halved and seeded<br><br>
2 orange bell peppers, halved and seeded<br><br><br><br>
Place rice and lentils and water in a pot and bring to a boil. Cover, reduce heat to low, and simmer 45 minutes, or until tender.<br><br><br><br>
Heat the olive oil in a skillet over medium heat, and stir in garlic and seitan. Cook about 5 minutes. Mix in 1/4 cup marinara sauce, season with salt and pepper, and continue to cook and stir until Seitan is evenly brown.<br><br>
Preheat oven to 350 degrees F (175 degrees C).<br><br>
Stuff all the peppers with the mix, pour on the remaining sauce and any extra stuffing you might have and bake for about 25 min.<br><br><br><br>
During the summer when I have fresh tomatos I like to slice up tomatos for on top also<br><br><br><br><br><br>
For cabbage rolls I just use a standard recipe and sub vege protien in place of the meat.

quick-n-easy-cabbage-rolls<br><br>
(i dont have a set recipe i follow, i sort of just wing it, but i make it about once a month so yaeh, and its very yummy)<br><br><br><br>
*make rice (wild,white,whatev)<br><br>
*cut around stem area of cabbage<br><br>
*Boil cabbage head-<br><br>
*while boiling, mix together:<br><br>
morningstar farms veggie crumbles<br><br>
pasta sauce (i use a roasted veggie flavor, but any will do)<br><br>
sliced onion<br><br>
crushed garlic<br><br>
rice<br><br>
celtic sea salt<br><br><br><br>
I usualy do 1:1 portions of rice and "meat" and add enough sauce so that its still a thick mixture but saturated with sauce.<br><br><br><br><br><br>
*by this time the cabbage should be getting soft, or at least the outer leaves.<br><br>
*peel off the leaves by grabbing them where you cut the stem and set them aside.<br><br>
*once you get all the softer leaves off put the remaining head back in the water.<br><br>
*take the leaves that are falling apart (ripped, torn, etc) and cut them up and throw them in your mix.<br><br>
*mix it up!<br><br>
*scoop a spoonfull of the mixture into one of the leaves, roll it up, place it in a cassaroll baking dish<br><br>
*repeat<br><br><br><br>
by the time you get through you first set of leaves the rest of the cabbage head should be soft - get those leaves<br><br><br><br>
repeat until you run out of cabbage and/or mix<br><br>
(if have extra cabbage - throw it with some farfalle and olive oil for tomorrow! -- if have extra mix - throw a side of veggies and eat it just like that - it makes a yummy rice dish!)<br><br><br><br><br><br>
once your cassaroll dish is full, cover it all in a layer of sauce (i usualy use 2 jars of sauce total [one for mix one for cover] for a single head of cabbage worth of rolls)<br><br><br><br>
sprinkle some celtic sea salt and basil on top and toss it in the oven at like 350 for um... 15 minutes maybe. ( i said i just wing this lol)<br><br><br><br><br><br>
anyway, once its done, let it cool a little and dig in!<br><br><br><br>
yum yum yummy!

I just wanted to "bump" this to let Troub know that I made his cabbage rolls today and they were REALLY tasty!!<img alt="" class="inlineimg" src="/images/smilies/smitten.gif" style="border:0px solid;" title=":smitten:"><br><br><br><br>
