I would like to find a vegan cookbook, that contains easy recipes, i.e. ones with few ingredients, and ingredients that most non-vegans are likely to have in the house. not things like tofu or seitan kinda things

Is there such a thing?

Table for Two is very simple and yields good results, but it does have some tofu recipes. I strongly advise to try tofu in some recipes. It's readily available in most supermarkets these days, and it can be made into many delicious dishes from appetizers to desserts. I couldn't live without it!

World Vegetarian isn't vegan but most of the recipes are if you skip the dairy chapter and/or modify things a bit. It doesn't call for fake meats or any other funky substitutes although you might need to get the extra spice or two. The sections are arranged by main ingredient and it will give you plenty of things to do with a variety of vegetables, legumes, grains, nuts and so on.
