A few ideas that I use:
- spread 2 corn tortillas with fat-free refried beans (canned or homemade), top with shredded lettuce and chopped tomatoes
- Boil some brown rice, then mix with beans and salsa
- Boil some brown rice, then mix with canned or homemade vegetarian baked beans
- Microwave a potato and top with beans, salsa, other toppings that are vegan

Hope that helps!

I often make fresh salads and chuck a can of beans or chickpeas through them to get some protein/bulk.

I'm also a big fan of stir fry vegetables Although if you have to prepare all the veggies then it can take a while (I use frozen ones frequently).
