Lidia's Sopa de Quinoa - Quinoa Casserole<br><br>

Suitable for a: vegetarian diet<br><br><br><br><br><br>
Ingredients:<br><br>

1 Tbsp butter<br><br>
3 Tbsp vegetable oil<br><br>
1 medium yellow onion chopped<br><br>
3-4 cloves garlic pressed or minced<br><br>
1/2 cup diced bell pepper<br><br>
8 oz green peas (I use frozen)<br><br>
1/2 tsp ground chili<br><br>
1/2 tsp salt<br><br>
1/2 tsp cumin<br><br>
1 cup water<br><br>
2 cups pre-cooked quinoa<br><br>
8 oz tomato paste<br><br>
14 oz jack cheese<br><br>
ground pepper to taste<br><br><br><br><br><br>
Instructions:<br><br>

Pre-heat oven to 350<br><br><br><br>
Heat vegetable oil in a sauce pan. Add the onion, bell pepper, garlic, chili, salt and cumin and saute until the vegetables are limp (about 5 minutes.)<br><br><br><br>
Add tomato sauce, water and peas then bring to a boil and then simmer for 5 minutes<br><br><br><br>
Butter oven pan and spread the pre-cooked quinoa in the pan. Pour the prepared sauce over the quinoa and then spread the cheese over the top. Heat in oven for 5 minutes or until the cheese is melted.<br><br><br><br><br><br>

I have reprinted the recipe as I originally got it. One can leave out the cheese and I do not use any butter in the pan. I also sometimes use more than 2 cups of quinoa, I think it depends on how saucy you want your casserole.
