Lidia's Sopa de Quinoa - Quinoa Casserole

Ingredients:

1 Tbsp butter
3 Tbsp vegetable oil
1 medium yellow onion chopped
3-4 cloves garlic pressed or minced
1/2 cup diced bell pepper
8 oz green peas (I use frozen)
1/2 tsp ground chili
1/2 tsp salt
1/2 tsp cumin
1 cup water
2 cups pre-cooked quinoa
8 oz tomato paste
14 oz jack cheese
ground pepper to taste
Instructions:

Pre-heat oven to 350
Heat vegetable oil in a sauce pan. Add the onion, bell pepper, garlic, chili, salt and cumin and saute until the vegetables are limp (about 5 minutes.)
Add tomato sauce, water and peas then bring to a boil and then simmer for 5 minutes
Butter oven pan and spread the pre-cooked quinoa in the pan. Pour the prepared sauce over the quinoa and then spread the cheese over the top. Heat in oven for 5 minutes or until the cheese is melted.

I have reprinted the recipe as I originally got it. One can leave out the cheese and I do not use any butter in the pan. I also sometimes use more than 2 cups of quinoa, I think it depends on how saucy you want your casserole.
