Hi everyone.<br><br>
I'm not much of a cook and I don't like to cook. But I'd like to reduce my soy intake. I like both lentils and rice but have some questions.<br><br>
Can I cook lentils and then freeze them for later? I'd like to cook an amount and then freeze and thaw to use in lentil burgers or other dishes at a later date.<br><br>
Also is there a way to revive left over rice? I find it kind of hard when I reheat it. Perhaps add a little more water?<br><br>

I think freezing lentils should be fine, especially if you're going to make burgers out of them later, where presumably preserving the original texture and structure doesn't matter.<br><br>
As for rice, I'm not really sure how to soften it. I suppose you don't have anything to lose by adding some water, and maybe letting it stand covered a while while it's steaming. Good luck.

isnt reheating rice bad? like, you can get food poisoning really easily from it or something? maybe im thinking of something else...

I freeze ziploc bags of lentil soup all the time. Works fine.

Just add more water to the rice. And yea, be careful. It can lead to food poisoning is what I've always been told, but I'm at university where reheated rice is as common as my roommates risking alcohol poisoning for a 'fun' night.<br><br>
I think as long as you exercise common sense reheating rice is fine.

The comments about rice causing food poisoning is something I have never heard. Beyond any spoiled food making a person sick. Is there something about rice that makes it more prone to this?

From wiki; Cooked rice can contain Bacillus cereus spores, which produce an emetic toxin when left at 4–60 °C (39–140 °F) [6]. When storing cooked rice for use the next day, rapid cooling is advised to reduce the risk of toxin production.

Very interesting. Thanks for the info and I'll certainly keep this in mind when saving rice in the future. I'll make sure I cool it well and use leftovers by the next day.

As well as rapidly cooling the rice, you should only reheat the amount you need, as rice should not be reheated more than once. Make sure it is thoroughly reheated as well.
