Lemon-Grass Soda<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>

6 oz. sugar<br><br>
6 lemons, juice and grated rind<br><br>
2 lemon grass stalks, cut in 2 inch pieces<br><br>
roughly smashed or crushed<br><br>
1 1/2 cups club soda<br><br><br><br>
Crushed ice<br><br><br><br><br><br>
Instructions:<br><br>

Place the sugar, lemon rind and juice, lemongrass stalk in a pan with 1/2 cup tap water. Taste and add more sugar if needed.<br><br><br><br>
Heat gently, stirring until the sugar dissolves then simmer gently for five minutes then allow to cool in fridge 2 hours.<br><br><br><br>
Strain the liquid into a container then stir in the soda water.<br><br><br><br>
Pour into 2 or 3 tall glasses over crushed ice.<br><br><br><br>
