This is a beautiful Hungarian dish, I will write down the vegan version of it, it's a tomato-peppery type stew, I can recommended it with a slice of fresh bread. Or with rice. It's simple and lovely!<br><br><br><br>
Lecso:<br><br><br><br>
INGREDIENTS:<br><br>
6 peppers -cleaned & sliced<br><br>
4 tomatoes - freshly diced or canned<br><br>
2 onions chopped<br><br>
3 tablespoon vegetable oil<br><br>
1\\2 teaspoon of Paprika<br><br><br><br>
Sauté onions & peppers with oil in a large fry pan until tender<br><br>
Add diced tomatoes.<br><br>
Cover with lid and simmer on low heat for about 30 minutes.<br><br><br><br>

kale is nice stir fried<br><br><br><br>
simply stir fry in oil and garlic with caraway seeds and add a good quality balsamic vinegar.<br><br><br><br>
or garlic, tamari sauce

approximstely how many servings does this make?<br><br><br><br>
It looks very yummy and very easy...might have to try this!

I just ate this. It's pretty good. And surprisingly filling (although that may have more to do with the 2 slices of bread I ate <img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p">).<br><br>
I think next time I would use canned tomatoes for the extra liquid and tomatoe-y flavour.

MMMmmmm... I can imagine this being heavenly with some huge, sweet Hungarian orange bell peppers from my garden this summer and some vine-ripened tomatoes. <img alt="" class="inlineimg" src="/images/smilies/lick.gif" style="border:0px solid;" title=":lick:">
