Hehe, I just made a batch two days ago and they were great!<br><br><br><br>
Ingredients for 10 regular size muffins:<br><br>
A:<br><br>
2 cups all-purpose flour<br><br>
2 tsps baking powder<br><br>
2/3 cup semi-sweet chocolate chips<br><br>
1/2 tsp salt<br><br><br><br>
B:<br><br>
1/2 cup sugar<br><br>
3 tbsp maple syrup<br><br>
2 tbsp canola oil<br><br>
1 tsp vanilla essence<br><br>
equivalent of 2 eggs or you can use 2 tbsp corn starch + 3 tbsp water<br><br><br><br>
Set aside:<br><br>
1/2 cup "milk"<br><br><br><br>
Preheat oven to 350F. Grease 10 muffin holders.<br><br><br><br>
Whisk A together until well mixed. Cream B together until smooth. Add flour mixture A into B and add in milk. Mix quickly using folding method with a rubber spatula until all the dry ingredients are wet. Spoon into the muffin holders about 2/3 full. Bake in the middle rack for 25 minutes or so until done.<br><br><br><br>
