how well would baked tofu hold up in a lunch box and how good would it taste cold or at room temp?

Baked tofu holds up well! I've taken it more than once and eaten it cold. It's really good, especially if you bring some sort of sauce to dip it in.<br><br><br><br>
Sandwich filling ideas:<br><br>
- Hummus, greens, tomatoes, cucumber<br><br>
- Other bean dips with veggies<br><br>
- Nut butter and jam<br><br>
- Nut butter and banana or apple<br><br>
- Soy deli slices or thinly sliced baked tofu<br><br>
- Refried beans, greens, bell pepper, tomato<br><br><br><br>
Wraps:<br><br>
- Refried beans, bell pepper, tomato, salsa<br><br>
- TVP or veggie ground tacos<br><br>
- Hummus, greens, tomato, cucumber<br><br>
- Nut butter and banana<br><br>
- Leftover bean and/or rice dishes<br><br>
- Falafel (or in pita) with greens and tahini sauce<br><br>
- Bean dip and veggies<br><br><br><br>
Also, try bagels, pitas, wraps, English muffins, etc. for some variety!

If Im really in a rush in the morning Ill just stuff celery with whatever kind of nut butter I have hanging around. That is quick and packed with protein and fiber!
