I had a baby in June and will be going back to work next Thursday. I am a new vegetarian and am looking for some ideas for lunches. I will be nursing my baby at her day care center over lunch, so I need it to be something I can eat on the go or at my desk quickly before or after I nurse her. I would love to have something I could prepare on the weekends ahead of time!

I know that a lot of people make a faux tuna or chicken salad with slightly mashed chickpeas, mayo, and all of the fixings. I personally eat a lot of wraps with hummus, feta, cucumber, and roasted red peppers. I take the components separately so they don't get soggy. I take a lot of leftovers too. When I don't have anything, I eat a Lean Cuisine or Amy's.

You might consider making veggie wraps. You can fill them with anything you want and they're very convenient to eat on-the-go. My favorite things to put in them are sliced carrots, cucumber, spinach, celery, and hummus. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

I cook a pot of beans every week so lunch is based on the bean. Sometimes steamed veggies and seasoned beans, bean burger, soup, stew.<br><br>
Don''t forget to supplement B12 esp. if you're breastfeeding!<br><br>
Sorry, realized lunch ideas weren't feasible!<br><br>
Fat free refried beans, or hummus with celery or bread. Any seasoned mashed bean sandwich.<br>
Do tofu? seasoned sauteed cubes could be eated cold or warm.<br>
PB and J. Pb and celery.<br>
Avocado on a sandwich with other stuff.<br>
Keep things like trail mix at your desk to compensate for light lunches.

Tofurkey has a brand of lunch "meats" that aren't bad. Some weeks I keep a loaf of bread in my locker & some tofurkey slices/pickles in the work fridge, and make a sandwich each day. You could make the sandwiches on the weekends though and just keep one each morning. I often keep some hummus at work as well to eat as dip or on sandwhiches. Has someone else said Amy's has a good selection of frozen veggie lunches or you can just go with veggie versions of other frozen meals.<br><br>
Something else I do often is to make a large salad and/or a large fruit salad and scoop out some into a container for lunch each night.
