I part of animal rights meetup group and together with the vegan society of toronto they are planning to make monthly potlucks where peoople bring vegan food and there will be different guest speakers on animal rights etc. I am really interested in going. I assume the fact that I am not a vegan isn't a problem as long as i bring vegan food, but i can't come up with many ideas. A lot of food i can think of should be served hot and i don't think this is good for a potluck. otherwise i can only think of several bean salads. you have any other ideas?

Bruschetta!

I mean, the bred is supposed to be warm/hot, so I'd cook it right before you leave and then wrap it in tin foil or something.
The tomato/basil/optional onion part is meant to be cold, so you could easily fit that in a cooler. I make it for parties all the time and I just put the bread on a plate, and then put the tomato mixture in a container on the side so people can scoop it on themselves.

This is the recipe I use and my whole family loves it! http://simplyrecipes.com/recipes/bru...ato_and_basil/

Stuffed cabbage rolls. I love these! stuff them with some rices and grains of your choice, dont forget some good spice like garlic, onion, salt and pepper. A good tomato sauce and yep that's always a winner to me..plus they are fairly inexpensive to make so you can make a bunch

small boiled potatoes, spring onions (scallions) a chopped red pepper and a chopped tomato, mix together, and then stir in a pot of hummus (water it down slightly with hot water). Great hot or cold (and it's my dinner tonight
