A previous ice cream post has me inspired. I want to invest in a nice ice cream/sorbet maker, but haven't a clue where to start. Any and all suggestions would be appreciated!

i bought my 2 /12 qt from Walmart. You don't need one of the big ones that makes 5 qts, as vegan recipes just aren't that big, plus they only churn for a half hour-40 minutes anyway, even if you did need to freeze a large amt for an event.
Mine is a Rival I believe. You need to be able to put the canister and the paddle in a freezer for several hours to overnight prior to using it so it's nice and cold. Youre ice cream recipe will also have told you to chill the mixture.
Another option, and my sister says it works really well, is the KitchenAide ice cream adapter for her stand mixer. I don't have it, but she does, and likes it.
Now go make ice cream! I do like the ice cream cookbook The Vegan Scoop, but it's the only one I have....all soy milk/creamer based and it starts with the same base mixture.

I have a 2 quart cuisinart ice cream maker - it's the costco version of this one (it was $10-15 cheaper from costco). It works great. There's also a smaller one that has similar reviews. I agree that unless you're making ice cream for a lot of people, you don't need a very big one.
Definitely keep in mind that you need to have freezer space for the bowl. It's fine for me because I have a chest freezer with plenty of room, but I think it would be difficult to fit in my regular freezer if I had much else in there. You can get ice cream makers that use ice and rock salt, but I think that would make the process a lot less convenient so I would only consider that if you absolutely don't have room in your freezer for the bowl. I would definitely get an electric one rather than one with a hand crank.

It makes soft serve, but if you put the ice cream in the freezer afterwards, it's like hard ice cream. I love it! It doesn't take up very much room, and is very easy to store and even easier to clean. If you're looking to make lots of ice cream, well, it's not the best.

Another alternative frozen treat to consider would be popsicle molds. I use them to make fudgsicles (banana, cocoa powder, maple syrup, soy milk) and mango pops (just mango puree). I bought these that look like ice cream cones for my niece, but Tovolo makes other styles too. I run them under hot water to loosen them from the mold, then try to let them sit out for 10 minutes or so they have the texture of soft serve. And in the case of the mango, VERY healthy. It has texture like ice cream, but is all fruit.
A cuisinart ice cream maker was the first thing I bought after going vegan, and I barely use it. Another useless device in my kitchen cabinet of shame. I think it failed with me because it required too many steps. You have to plan ahead and freeze the container over night. Then you have to create your ice cream mix in a blender and partially freeze that for awhile. Then once that gets semi-frozen, you can put it in the ice cream maker. Then they recommend you freeze the ice cream for a little while before serving. Too much back and forth, start and stop for me.

Anymore I freestyle off a basic formula (2 parts 'rich' nutmilk, 1 part not-so rich nutmilk, 1 part sweetener, flavorings) to make custom flavors on-the-fly.

Jess, I'm an obsessive recipe collector myself. I have SO MANY saved recipes in my files. It's just too much fun.
Mojo, the molds are adorable. I'm definitely ordering a set. We made paletas a lot last summer, and I made a sort of soft serve frozen banana concoction similar to yours, but never thought of putting it into a mold. Great idea.
