I Gotta Pea Burger!<br><br><br><br>
This recipe is suitable for a: vegetarian/vegan diet.<br><br><br><br>
Category: Sandwiches/Burgers<br><br><br><br><br><br><br><br><br><br>
Ingredients:<br><br>

2 or 4 tablespoons olive oil<br><br>
1/2 cup chopped onion<br><br>
1/2 cup chopped bell pepper<br><br>
Salt and freshly ground black pepper<br><br>
2 teaspoons minced garlic<br><br>
4 ounces sliced mushrooms<br><br>
3 cups vegetable broth<br><br>
1 cup dry split peas, picked and rinsed<br><br>
1/2 cup dry brown rice<br><br>
1 teaspoon ground coriander<br><br>
1 teaspoon ground cumin<br><br>
1 cup bread crumbs<br><br><br><br><br><br><br><br><br><br>
Instructions:<br><br>

Heat 1 or 2 tablespoons of oil in a 4 to 6-quart saucepan over medium heat. Add the onion and bell pepper along with a generous pinch of salt. Sweat the onions for 5 minutes or until the onions are soft. Add the garlic and mushrooms and continue to cook for another 4 minutes.<br><br>
Add the broth, peas, rice, coriander and cumin. Increase the heat to high and bring to a boil. Decrease heat to low, cover and cook at a simmer for 1 hour or until the rice and peas are tender. Take off the heat and put mixture into a food processor and process until just combined. Do not puree. Pour this mixture into a bowl and stir in 3/4 cup of the bread crumbs. Season with salt and pepper then refrigerate for 30 minutes or more. Then shape the mixture into patties and dredge on each side in the remaining 1/4 cup of bread crumbs. Heat 1 or 2 tablespoons of oil in a medium saute pan over medium heat. Add 2 burgers at a time and saute until brown on each side, approximately 3 to 4 minutes per side you can grill these too. Grill for the same times as frying. Serve immediately.<br><br><br><br><br><br><br><br><br><br>

Serve on your favourite bread or buns. Add lettuce, tomatoes or your favourite condiments to make it your own!<br><br><br><br><br><br><br><br>

I made these today and they were amazing! It made 7 burgers, I don't know how many you usually make out of the batch. I don't use oil when I cook so I just cooked the onion and pepper in water for 10 minutes and it worked the same. When I fried the burgers in a frying pan I just used a calorie free spray instead of the oil. They turned out well, my only beef with these burgers (my pun is so damn funny...hehe) is that they stay mushy after being cooked. When they are fried in the oil are they less mushy? I was thinking about trying to cook one in the oven and see if it gets a bit more crisp. The taste was awesome though, and I will definitly be making these again.

They crisp up nice with the oil usually. I have thought about trying it with cooking spray too, to see how they do. I like to grill them too, they are so yummy off the grill! I usually get 6-8 burgers depending on how big I make them.

I had everything on hand except the mushrooms and they came out great!<br><br>
I toasted up some wheat buns for the pea burgers to go on and we had organic chips and small salads on the side. Excellent meal <img alt="" class="inlineimg" src="/images/smilies/thumbsup.gif" style="border:0px solid;" title=":up:"><br><br><br><br>
If it were up to me I'd eat these everyday!

could i put these on the george foreman grill? or would it be better to just fry them in the oil? ... i'm making my [pea-loving..lol omni] dad for fathers day... i hope they are good!

I can't wait to try these, purely for the name! I'm cursed with soggy burger syndrome so I always bake mine and that seems to do the trick (since I can leave them in the oven till they are hard enough for me).<br><br><br><br>

I haven't personally tried these (yet!) but generally with lentil/bean burgers, if you grilled them properly you'd have problems with crumbling.

I made these last night -I did add 1 flax egg (1 tbsp ground flax + 3tbsp water) and used a burger press but these were one of the firmest burgers in texture I have made <img alt="" class="inlineimg" src="/images/smilies/thumbsup.gif" style="border:0px solid;" title=":up:"><br><br>
I liked the flavor -would go well with some mango chutney <img alt="" class="inlineimg" src="/images/smilies/yes.gif" style="border:0px solid;" title=":yes:">
