hummus is a dip/spread made from chickpeas, primarily - it also has some other stuff in like lemon juice and tahini, but I don't remember what it has in exactly.

It's good in hummus salad sandwiches or for dipping veggies/breadsticks in.

It's also a food of the gods and subject of much heated debate here on VB.

I have a kick butt recipe for a healthy "no-salt" hummus if you want one.

I use it as a spread for spinach/tomato/cucumber sandwhiches or homemade bean burgers.

Mine has garlic, lime juice, chickpeas/garbanzo beans/ and raw seasame seeds/Tahini in it!!

I like mine a LOT better when made with pinto beans.


This is from Raising Vegetarian Children

2 c. cooked pinto beans, drained

2 tbs. tahini

2 tbs. balsalmic vinegar

1/4 to 1/2 tsp bottled hot sauce

1/4 tsp ground cumin

salt

2 to 4 tbs. sliced scallions

Combine beans, tahini, vinegar, hot sauce, cumin and salt to taste in a food processor. Blend into a smooth paste. Pulse in scallions until finely chopped and evenly distributed.

(I used chili powder instead of hot sauce, and white vinegar since I didn't have the other stuff, and it turned out very YUMMY)

I love hummus, and would love that recipe

Here is the healthy Hummus recipe.

Dr. Fuhrman's Tasty Hummus Spread or Dip

Serves:

Preparation Time: 10 minutes

Ingredients:

1 cup cooked or canned garbanzo beans (chickpeas), reserving liquid

1/2 cup bean liquid or water

2 tablespoons lemon juice

1 tablespoon Dr. Fuhrman's VegiZest or other no salt seasoning, optional

1 tablespoon tahini (sesame seed butter)

2 cloves garlic, finely chopped

1 teaspoon horseradish (optional)

Instructions:

Blend all ingredients in blender until creamy smooth. Makes an awesome spread or a dip for raw and lightly steamed vegetables.

Hey, I'm making carrot hummus for lunch tommarow.

I use:

1 cup carrots (cooked in a little water till soft)

1 can garbanzo beans

2 teaspoons peanutbutter

1 clove of garlic

1 teaspoon parsely and some dill weed

1 teaspoon lemon juice

dash of pepper and salt

I like it on toast, but I'll eat it with celery tommarow.
