I am the queen of lazy when it comes to preparing food...
Breakfast: smoothies are quick and easy...combine a banana, cheap frozen berries, some plant milk and voila! Instant healthy breakfast...granola, fruit, and plant milk is always great too.
Lunch: I eat a lot of avocado sandwiches...slice a ripe avo and spread between whole grain bread slices...add sprouts/tomatoes etc etc...or natural peanut butter and jelly is super easy. Or hummus...
Dinner: Salads are quick if you buy prepared bagged lettuce...top with nuts and canned chickpeas...nuke frozen mixed veggies, instant brown rice, there are a lot of organic frozen vegetarian meals available now at Publix and Sweet Bay. There is always pre-grilled tofu that you can heat up...rice noodles, pasta, chinese take-out...I've never been to a chinese restaurant that didn't have tofu veggies and rice on the menu...or vegetable egg foo young (sp?)
