I was wondering if you think I've ate a healthy dinner. It's pretty large, but I missed breakfast today from sleeping in.

One bowl of wheat noodles in a thai peanut sauce

Two bowl vegetable soup

One serving of sweet corn

10 carrot coins

Am I missing out on certain nutrients?

Sounds good to me... grains, assorted veggies, and a bit of legume. I'd say you're doing great, assuming that your other meals of the day contain things like fruit, beans, and of course, more veggies (esp. greens) and grains... and maybe a multivitamin for good measure. :)

Seitan, beans, other legumes like lentils, nuts, tofu, quinoa, tempeh, whole wheat pasta, meat substitutes. For vegetarians, low fat organic dairy like cottage cheese, string cheese, other low fat cheese, low fat milk, eggs.

TOnight I am making this dinner: organic field greens with tomatoes, shredded low fat cheddar, walnuts and croutons; cuban style red beans with peppers, onions, etc, served with rice. Get all those nutrients in there!

Where did you get the thai sauce? Was it a mix?

Im reading a health book that made me realize there are toxins everywhere..like I love stir frys and stuff and I use a lot of powdered sauces..I noticed how much of that stuff has "partially hydrogenated soybean oil" not to mention MSG and presevatives. All stuff Ive been told is toxic and to avoid.

Now Im not stressing out about this but its something Ill think about as I try and eat healthier and more purer in the future. I dunno if you make your own sauce but Im going to start learning more sauce recipes from whole ingrediants in the future. It disturbs me how much poison is in everything.

Ohhhhh. Hmm well then I dunno. But I wouldnt worry about it. Like I said, its nothing I worry about, the bad stuff is only in small amounts. Its just something to think about. Overal I would say that is a pretty healthy meal. Personally Id replace the corn with something green like broccoli or spinich. I dont care much for corn except in certain recipes.
