I been reading your recipes here all week and been trying them and everything is really great so far! Can you share with me how you use your silken tofu in desserts and milkshakes? I have no experience with tofu at all except for the new Tofulicious. I REALLy like that stuff! I can't wait to try the chocolate pudding recipe I saw already! Thanks so much you all are dolls teaching me how to "cook" ! <img alt="" class="inlineimg" src="/images/smilies/grin.gif" style="border:0px solid;" title=":D"> I am sooo tired of spending sooo much on the packaged stuff....wanna cook/make it myself!

I just put some soft tofu and blend it until it is really smooth and then add it to a recipe as per the directions.<br><br><br><br>
I can post a few recipes if you are interested. I made a really good lemon pie recipe up the other day <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

Here's a tofu pumpkin pie recipe that I absolutely love. I made it many times a couple of years ago around Thanksgiving-<br><br><br><br><a href="http://www.vegweb.com/food/sweets/1202.shtml" target="_blank">http://www.vegweb.com/food/sweets/1202.shtml</a><br><br><br><br>
If I remember right, Keebler graham cracker ready made crust is vegan.<br><br><br><br>

Lemon pie<br><br><br><br>
(I never measure so these are mainly estimates)<br><br><br><br>
1 T cornstarch<br><br>
1/2 cup lemon juice (use less if you don't like a strong taste)<br><br>
1 tub of soft tofu blended until it is very smooth<br><br>
1/2 cup sweetener (more or less to taste)<br><br>
rind from 3 lemons<br><br><br><br>
mix the cornstarch and lemon juice together and then place over a medium low heat, add the sweetener and lemon rind and simmer until it is thick. Stir in the tofu and then place in a partially cooked pie crust and bake for 20 minutes at 375 or until the top of the pie is a nice yellow colour but not burned.
