Oh, come to think of it, Whole Foods did have a truckload of fresh Hatch green chiles back in late July-early August. They seem to be a highly seasonal item, though.<br><br><br><br>
I'll look for the frozen products. And I'm sure we must have dozens of Mexican markets around here where I could possibly find refrigerated roasted chiles-- I just don't happen to know where any of them are! But maybe I could get them at Fiesta, our local Hispanic-friendly supermarket chain. Because I had a green chile Garden Burger at Red Mill Burgers in Seattle that left me with a hankerin' for more!

I do not like any meat imitations in my tacos, peppers, beans and a good homemade salsa will do me, maybe some lettuce and fresh tomato and onion also

I read this post last night and it made me so hungry for tacos!! so tonight we had tacos for supper,<br><br>
this is what i did<br><br>
black beans<br><br>
some msf veggie crumbles<br><br>
onion<br><br>
all sauteed and chile powder, garlic powder, and cumin added<br><br><br><br>
we had lettuce, salsa, guac, cheese to add.<br><br>
they were good!

One of my favorite Mexican restaurant offers potato tacos. After trying them and loving them, I started boiling unpeeled red potatoes with several cloves of garlic, a bit of fresh onion, and some chick'nless broth powder. Once the potatoes are soft, I mash them w/ vegan margarine and chipotle peppers.<br><br><br><br>
Wrapped in fresh corn tortillas, with generous amounts of sliced avocado, salsa, and pico de gallo, they're out of this world.<br><br><br><br>
When time is of essence, instant mashed potatoes make a passable filling as well.

Wow! I would never have thought of that outside the context of a breakfast taco.
