Definately drain it first. Pressing it would be ok too, but I usually don't. I also like to slice my block in slices and wrap those slices individually in foil so I have "single serving sizes" of tofu whenever I want.

That's also why I slice it up before freezing, too. It's much easier to thaw a slice or two than it is to thaw a whole solid frozen-up block.
