actually these chickpeas are left over from my hummus-making. great hummus actually! the recipe from angelika's kitchen in nyc [i posted the recipe a while back.]

thanks for the tips. i can sleep easy tonight!

They last a few days in the fridge. Many months in the freezer. Better if the cooking water is drained and refrigerated or frozen separately. The cooking water from chik peas seems to be high in protein and wonderfully flavorful. It would seem criminally wasteful to discard any of it.

Directions for storing chickpeas:

Step 1.) mash chickpeas into a coarse mash

Step 2.) Add ingredients such as coriander, onion, garlic etc

Step 3.) Roll into little balls

Step 4.) Deep fry

Step 5.) Place in a pita w/ lettuce, grated carrot, tahini etc

Step 6.) Store in stomach
