Jello is made with gelatin, which is not vegetarian.

You can make it with agar-agar, not too sure on the proportions though. The Fat-Free Vegan blog (blog.fatfreevegan.com) has a recipe for "fruit gel babies" or something to that effect which are basically a jelly/jello.

Agar powder can be used with fruit juice. Bryanna Clark Grogan posted a recipe somewhere I can't remember where, but I saved it. So all credit goes to her.

VEGAN FRUIT JELL

Using agar alone makes a rubbery jell. If you add some starch it makes a more delicate jell.

4 c. sweet fruit juice of choice

OPTIONAL: sugar or other sweetener to taste if juice isn't sweet enough

pinch salt

OPTIONAL: some grated citrus rind.

1/2 tsp. vanilla or other flavoring , if desired

2 tsp. agar powder (OR 1/4 c. agar flakes)

1 T. cornstarch dissolved in 1 T. water

OPTIONAL: fresh fruit to add to jell

Sprinkle the agar over the juice (with sweetener, salt and any flavoring). Let soak a few minutes. Then cook over medium heat til boiling. Agar powder just needs to simmer for a minute; flakes should simmer at least 5 minutes. Add dissolved starch and stir in. Boil for 30 seconds.

Pour into a bowl or small bowls. Place in refrigerator. When half-jelled, you can stir in fruit. Let set until firm and cold.

If you just want a single portion, there are some commercially prepared gel desserts that don't actually have any gelatin in them. Just double check the ingredients on the label. I buy them for the kids on occasion for a special lunch box treat.

I usually just buy an agar-based fruit-flavoured jello from an Indian Market. My favourite jello, though, is Bryanna's recipe above made using sour cherry juice, sweetened to taste. (I know you could just use sweet cherry juice, but I prefer the flavour of sour cherry juice.)

Kingsmill Foods makes vegan jello (it's an add water and set mix). I ate a lot of it when I got my wisdom teeth out. It's in cherry and orange flavours.

Excellent! I just realized that there is a BB about 5 minutes away! I was just there for the first time on Friday night - loved it. I think I need to go again... Thanks!

Wow, you just went there for the first time recently?! I go all the time... it helps that there's one across the street. They recently started carrying organic spelt flour and organic cane sugar, which is nice.

^^Proving yet again that bulk barn kicks ass!

I'm not contributing anything to this thread, just happy to see there is vegetarian gelatin available. I have a recipe for coconut jello, but it uses non-vegetarian gelatin and it's from my vegetarian book I'll have to try the recipe posted above. Thanks for sharing it!

SB- just so you know, the only place I've found agar is at Rainbow Foods... it might also be at some other HFS's. Oh and so you're warned, it's hella expensive. I bought a little bag that was like, maybe 1/4 cup, and it was $9.

I thought I read a recipe a while back that used Chia seeds for some kind of pudding. I know it is not jello but I thought it was relevant to this thread.
