i've seen recipes for cheese loafs and such and wonder if anyone has ever made thier own cheeses? (loaf or otherwise) if so what recipe did you use and how did it come out? taste? is it gratable and how would one make cheddar or other flavors?

The ones I have tried are not gratable, but I think they are good.

I have tried Chef Deborah's Cashew Cheeze, Deb's Slicing Cheeze and Bryanna's Melty Cheeze sauce. All of these recipes can be found at www.vegsource.com. There are flavor variations for almost every cheeze available and Chef Deb has a tofeta recipe (feta tofu) that is TDF and she also has a Parmesan Cheeze sprinkle I am going to make. The cashew cheese is some of the best "cheese" I have ever had. I really like it on pizzas and in lasagnas. Shannon/Zimma

The basic "white cheez" recipe from Vegan Vittles grates (but you have to do it carefully). It's mighty tasty, and it melts (bonus).

The Uncheese Cookbook has tons of recipes (Vegan Vittles only has a few).

There are two or so "cheez" recipes that come in the vegan starter pack literature from www.veganoutreach.com (it's free - you just have to request it).
