Here's what i've been making. I'm not a great cook and my taste buds are a bit weird so take that into consideration if you want to follow any of my recipes. I welcome any suggestions for improvement.
This is the recipe that inspired me. I veganized it and left out the sugar. Between all the sugar form the OJ, craisins, and applesauce the cranberry orange recipe is really sweet, i think, but the other recipes might not be sweet enough for some people. I used vinegar* and baking soda* to make it rise a bit; i have no idea how much to use but the recipe seems to work; the baking soda also reacts with the vanilla and applesauce (and the OJ, which is why there's no vinegar in that recipe). I usually add protein powders, 6 T brown rice and 3 T pea, with the dry ingredients.
Baked Oatmeal Recipes
Cranberry Orange
3 cups rolled oats
2 teaspoons baking powder
2 teaspoons baking soda*
1 cup orange juice
3/4 cup apple sauce
1/4 cup oil
2 teaspoons vanilla extract
1 cup dried cranberries/craisins (i soak the craisins in an additional 1/4 cup of OJ because otherwise i find them to be too dry)
(walnuts and/or orange zest (especial if the extra OJ's not used) would probably make a nice addition)
Cinnamon Raisin
3 cups rolled oats
2 teaspoons baking powder
2 teaspoons baking soda*
2 teaspoons cinnamon
1 cup water or non-dairy milk
1 tablespoon vinegar*
3/4 cup apple sauce
1/4 cup oil
2 teaspoons vanilla extract
1 cup raisins
Cinnamon Apple
3 cups rolled oats
2 teaspoons baking powder
2 teaspoons baking soda*
2 teaspoons cinnamon
1 cup apple cider, apple juice, water, or non-dairy milk
1 tablespoon vinegar*
3/4 cup apple sauce
1/4 cup oil
2 teaspoons vanilla extract
1 cup chopped apple
Banana Nut
3 cups rolled oats
2 teaspoons baking powder
2 teaspoons baking soda*
1 cup water or non-dairy milk
1 tablespoon vinegar*
3 bananas, mashed
1/4 cup oil
2 teaspoons vanilla extract
1 cup chopped walnuts or pecans
(some sweet spices would probably be good)
Chocolate Chip
3 cups rolled oats
2 teaspoons baking powder
2 teaspoons baking soda*
1 cup water or non-dairy milk
1 tablespoon vinegar*
3/4 cup apple sauce
1/4 cup oil
2 teaspoons vanilla extract
1 cup chocolate chips
1. Preheat oven to 350º F (175º C)
2. In a large mixing bowl, mix together oats, baking powder, baking soda, and cinnamon (if used). Mix in liquid, vinegar (if used), applesauce/bananas, oil, and vanilla extract. Stir in fruit, nuts, or chocolate chips. Spread into a 9x13 inch baking dish.
3. Bake 30 (if you want it really moist) to 45 (if you're like me and want it well-done) minutes.
Makes 6-8 servings
It's common to pour (non-dairy) milk over the baked oatmeal but i don't like how mushy that makes it so i just eat it as a bar.
