Hippie Handbook Vegan Cake<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
2 cups brown sugar<br><br>
1 3/4 cups whole wheat flour<br><br>
3/4 cup un-sweatened cocoa powder<br><br>
1 1/2 teaspoons baking soda<br><br>
1 teaspoon salt<br><br>
1 cup soymilk<br><br>
1/2 cup vegetable oil<br><br>
2 teaspoons vanilla extract<br><br>
1 cup boiling water<br><br><br><br><br><br>
preheat oven to 350 degrees F<br><br><br><br>
combine the brown sugar, flour, cocoa powder, baking soda, and salt in a bowl<br><br><br><br>
add the soy milk, oil, and vanilla and beat for two minutes<br><br><br><br>
stir in the boiling water<br><br><br><br>
pour into an eight-inch square cake pan<br><br><br><br>
bake thirty-five to forty minutes<br><br><br><br>
allow cake to cool- the cake is done when a toothpick stuck into the center of the cake comes out free of crumbs<br><br><br><br><br><br>
Additional comments:<br><br>
it is a good idea to let the cake cool for a few minutes before eating, but it can be eaten as soon as it is tolerable to be eaten <img alt="" class="inlineimg" src="/images/smilies/wink3.gif" style="border:0px solid;" title=";)">
