OK so I am working my way slowly into more of a vegetarian diet, not that I am a big meat eater anyway. I just need to come up with more options than tofu and quinoa, and things my kids will eat : }

I'm a runner, done several marathons and tons of halfs. Want to do a tri this year. Love yoga and love to hate spin class
Oh and I am a mom and work FT, so I do not have as much time as I want to do all that !!!!!

You might be interested in The Vegan Dad blog. He cooks for his kids and documents the recipes. There are lots of kid-friendly things like vegan chickn mcnuggets, luncheon meat, hot wings, pizza, desserts, etc.

Also, if you are stuck in a rut of tofu and quinoa, you might be interested in my blog, Vegan Cookbooks Illustrated. I make recipes from famous vegan cookbooks and take pictures, and I seldom use either of those. It might give you some ideas of things to prepare.
