I really want to help my beau get on a better diet.<br><br><br><br>
My beau has severe allergies to leafy greens. They make his throat swell. Because of this problem he relies mainly on meat and cheese, and the occassional pasta [usually ramen because he hates spaghetti].<br><br><br><br>
He is eating Taco Bell on a daily basis and it's making him really sick. Can I get him healthier even without the leafy greens?

I shouldn't say <i>leafy</i> greans. Pretty much anything green causes an allergic reaction. I think the only vegetables he can actually have are potatoes, corn, and onion.

There's heaps of stuff. I have food intolerances too so I can sympathise <img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":("> What about sweet potato, pumpkin (I think you guys call it squash), capsicum, baby corn, zucchini, (although it is green),beets (the fresh one's not the tinned ones), tomatoes, swedes, beans, lentils (yuuuuuum), quinoa, millet, rice, tofu, the list is endless (sorry I'm getting all excited at the possibilites-lol). Are you after recipes? If so <a href="http://www.vegweb.com" target="_blank">www.vegweb.com</a> is great! Is your boy thinking of going veg or are you just trying to get some healthier options for him?

I'm not pushing it. It's not something I do. I figure if he wants to or at least wants to consider it then he can decide that for himself and he of course can come to me.<br><br><br><br>
He actually just got me <span style="text-decoration:underline;">Vegan With A Vengeance</span> so I have been scowering it for good recipes.<br><br><br><br>
I have many food intolerances. I am allergic to corn, soy, wheat, rice, broccoli, spinach, peanuts, legumes and all trees and grasses which cross-react making it so I can't eat any fresh fruit or else I have a severe allergic reaction. I still eat most of these things anyhow, but it has done a number on my internals. I suffer from ulcers and Crohn's Disease. Odwalla has been my saviour. ^_^<br><br><br><br>
My beau loves burritos but I am dying to get him away from Meximelts, tacos without lettuce, and Taco Bell's bean burrito.<br><br><br><br>
He is also so darn picky! I am not really out for recipes but they are welcomed here. I have been on vegweb a lot but I'm hoping this new cookbook has some stuff in there that he can have with me. I am annoyed that if I want to eat with him I have to agree to Taco Bell. <img alt="" class="inlineimg" src="/images/smilies/thumbsdown.gif" style="border:0px solid;" title=":down:"> [Taco Bell makes me very sick to the point of severe vomiting and a bed-ridden night].

Ugh, I hear you. I have severe IBS (I know it's not the same as Chrone's but I do know the pain you go through somewhat), so bad that 2 GP's and my specialist have given up on me. We don't have taco bell here but if it's anything like Burger King or Macca's I'm in agony if I attempt it too <img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":("> I'm guessing though that's it's mexican type food? I can't handle it either. I can eat a small amount of refried beans but that's about it <img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":("><br><br><br><br>
I'm waiting on Vegan with a Vengence from my library (lol, so impatient, it's taking FOREVER!!!).<br><br><br><br>
Wow you have more food intolerances/allergies than I do. I have more specific type foods that I have problems with (like avocado, all fruit, soy, banana's bother me at times). Errr can I ask what is Odwalla?<br><br><br><br>
It's really tough trying to work out what to eat around intolerances. I have a fairly take away (meat addicted) husband so we don't eat together anymore either really <img alt="" class="inlineimg" src="/images/smilies/sad.gif" style="border:0px solid;" title=":("> The odd pasta meal but that's about it. Sorry I'm not much help am I but I can offer loads of empathy!

Taco Bell is a taco/burrito Mexican fast food joint. It's greasy and horrible for you so I don't have it often but when I want my beau to just shut it and eat with me I cave.<br><br><br><br>
Odwalla is a natural smoothie sold in many large grocery chains here in the U.S. Their website is <a href="http://www.odwalla.com/" target="_blank">here</a>.<br><br><br><br>
I found a few good recipes in <span style="text-decoration:underline;">Vegan With A Vengeance</span> that I am going to make and when I told him I wanted him to try eating the things I'm making he said, "I'll have to force myself to like it." He admits his diet is poor and he is forever complaining about his weight but he says he thinks the <i>texture</i> will make him gag. o_O<br><br><br><br>
It was an odd response so he says I'll have to keep making it all the time and making him eat it before he likes it. This is going to be a monsterous challenge.

Lol, for meaty texture maybe you could make him seitan or something (although you couldn't eat it with a wheat allergy). I've eaten it a few times but it's a bit meaty for me (you could make him low fat home made burrito's with it!). He he, I made a "chicken" burger last night and had to get rid of it cause it felt too chickeny, blech.<br><br><br><br>
It is weird but I can imagine him missing meats texture I guess. Good luck with it. Let me know how you go!!! I have zero hope of converting my DH so I wish you much luck!

He doesn't need to go veg, he just needs to eat less meat and cheese. It's all he relies on for sustenance and it means he is sick very, very often. He is always tired and groggy. He is forever having bad heartburn and stomach pain. I just want him to start eating better things so he gets some energy and health back.<br><br><br><br>
The first thing I am making for him this week is Stewed Tofu and Potatoes with Miso Gravy. It sounds delicious to me, and so I hope the texture goes okay for him. Seitan might be a good one to try. <span style="text-decoration:underline;">Vegan With A Vengeance</span> does have quite a few Seitan recipes, including Jerk Seitan. I can try those after this week's meals. The other one I am making [something I have had before] is Matzoh Ball Soup. I have had this before when I was dating someone who was Jewish. His mother made it for us and goodness, was it delicious! Since I already know this is going to tickle my fancy I thought it would be a good one for him because Mazoh Balls are delicious and the texture isn't all that strange. Maybe a little. ^_^<br><br><br><br>
I am also making vegan chocolate pudding which I am going to stuff raspberries with. Mmm ...<br><br><br><br>
The good thing is, my beau <b>loves</b> fruit. The bad thing is, there aren't a lot of fruit recipes in <span style="text-decoration:underline;">Vegan With A Vengeance</span>. I'll have to hit up VegWeb and a few other places to see what I can find.
