Probably a really dumb question BUT I am making vegan quiche tonight (ie. tofu) and because it's just for me, I'm going to have enough for 4 nights worth of meals.<br>
Does anyone know whether it will last this long, if kept in the fridge? Or will it go off?<br>

4 days is probably ok, assuming it's handled properly. Most cooked food get 3-5 days in the fridge for me. If you think you might not use it up quickly enough, you could probably look up if some similar recipes freeze well -- I think I have heard of people freezing tofu quiche.

I think it'd be fine and I'd eat it, although I'd probably be sick of tofu quiche after those 4 days are over<img alt="" class="inlineimg" src="/images/smilies/tongue3.gif" style="border:0px solid;" title=":p">

I eat leftovers for about a week. I make a big batch of something on Sunday and bring it for lunches Monday through Friday. Never had a problem.

Thanks heaps <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"> I've just had my third day of quiche and it's starting to get a little bit tedious! I wish I could freeze some but our freezer is tiny and every time I open it, various meat products fall out (my flatties eat meat and freeze most of it) so I avoid it
