How long does it take to thaw? I bought some Trader Joe's guacamole and they come in packets of 2, but I only need 1/4 of a packet for my meal. I tried to put the rest in a tupperware container and it turned brown within hours in the fridge.

its gonna turn brown in the freezer too, but its still good even if its brown. if you have some lemon or lime squeeze a little onto the guacamole and make sure its in an airtight container with no air trapped inside.

lovourmother has a great idea here about adding some citrus to prevent the discoloration -- actually, I think lime juice enhances the flavor of guacamole really nicely anyways <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)"> And actually, I've found that freezing avocado, even without the lime juice, prevents it from turning brown. Just have to make sure you get it in the freezer shortly after you prepare it. To keep it from browning as it thaws, you can throw it in the microwave so it thaws much more quickly. I wouldn't heat it till it's hot, though -- it tastes much better cold, IMO.
