I don't really have a favorite combination, but here are somethings I put in mine:
Grilled yellow squash
Grillled portabella mushroom
Grilled bell peppers
Cheese or uncheese of choice
Sometimes I marinate the veggies (usually with a bottled salad dressing), sometimes they just get salt and pepper. They usually go on a sub roll or in a wrap--regular sandwich bread doesn't seem to hold them well. The bread gets toasted and the wrap gets warmed up.
Roasted red peppers, diced tomatoes, sliced fresh avocado, topped with vegan montery jack cheese and served on hemp seed bread with a side dish of a yummy sauce for dipping or drizzling. (Btw, sandwich is grilled or put under broiler until cheese melts.)
I miss this. Haven't been able to have it in a few months, now. *sigh*
Portobello 'shrooms, red peppers, fat asparagus, eggplant, zucchini, Vidalia onion, artichoke, tomato (especially green). Serve on baguette, smeared with mixture of mayo and smashed roasted garlic; salt/pepper to taste. Too much joy!
