Grilled tomato and 'cheese' sandwich<br><br>

Suitable for a: vegan diet<br><br><br><br><br><br>
Ingredients:<br><br>
------------------------------------------------------<br><br><br><br>
half a roma tomato (or tomato of your choice)<br><br>
slices of any vegan/veggie 'cheese' you like<br><br>
2 slices whole wheat bread<br><br>
few sloshes of olive oil into a pan<br><br><br><br>
mustard and vegan mayo are optional<br><br><br><br><br><br>
Instructions:<br><br>
------------------------------------------------------<br><br><br><br>
start by putting a pan over the stove, with a few sloshes of olive oil on low heat<br><br><br><br>
take the 2 slices of bread and start by spreading mustard and vegan mayo (optional) on each piece of bread<br><br><br><br>
cut as many slices of 'cheese' as you would like<br><br><br><br>
cut the tomato into small pieces (makes for less sloppy when eating)<br><br><br><br>
layer the 'cheese' and tomato on the bread and make a sandwich<br><br><br><br>
grill in the pan, like you would a grilled 'cheese', it will go pretty quick<br><br><br><br><br><br>
