Love grilled cheese sandwiches? (AKA toasted cheese sammies) Post about it and the special tricks you do to make it the best quick meal ever.

What's the best kind of cheese to use? The best bread? Do you add tomatoes, avocado, mayo? Butter or margarine? Is there another butter-type product you've found that tastes even better? Do you spread the butter on the bread or heat it in the pan first? Stove-top pan or griddle?

Ahhhhh the options!

The other day I was craving grilled-cheese sandwiches, so, okay, check this out: I made some.

Only I'm watching my waistline these days so I decided to make them the Atkin's "low carb" way.

Turns out it's just a goddamn slice of melted cheese.

Blech!

I don't know how anyone could go on this diet.

Cheers!

PS. There are vegan cheeses and cheese slices so I think vegans and vegetarians should be able to coexist nicely in this thread, no.

I like extra sharp cheddar and miricle whip. I actually grill both sides of the bread (a friend thinks I am weird) and then put the cheese on, then grill the outside with another pan pressing it down to really flatten the sammie. I like darker toasty brown color. Grill Cheese and Tomato soup is great comfort food.

i love grilled cheese sammiches!!!

i only use the slices and bread- I'm a bit of a purist, but i do cut the sandwich in fourths to dip into tomato soup. tomato soup and GC is the yummiest ever.

i do not believe in using anything but butter or butter like substances- they give the sandwich a better flavor, and i stick to wheat or 7 grain bread. alvarado st flax bread is good too. I once made GC with a hemp bread and it was

tips:

the pan should be hot before adding the Butter or Butter-like substance. and don't skimp!

wait 15-30 seconds, remove sandwich, add more Butter or Butter-like substance, then place the other side of the sandwich down. allow Butter or Butter-like substance to soak into the bread. then proceed to cover and grill both sides. this especially helps when you are using cheese substitutes- as does lowering the heat a bit to allow more time for meltage.

I've heard goat cheese and onion GC is good, on crusty bread.

Everyone wants what jeezycreezy's got.

But to give you one serious contribution to your thread: I like putting simulated bacon bits on my grilled creezy sammiches.

Grilled cheese is my comfort food. I love them with ketchup or tomato soup.

Whether it be with real cheddar or vegan gourmet... grilled cheese is one of my favorite naughty indulgences!

Dang it... Now I want one for lunch!

All-time favorite sandwich (not really a grilled cheese sandwich but it involves cheese):

Start with some good crusty bread, smoosh a wedge of brie or camembert onto one slice and smoosh some avocado onto the other slice. In between, add lettuce and tomato.

Someday there will be a vegan replacement for camembert. Good, imported french cheese is a major weakness for me.

Damn straight. I haven't made one in a good long while, but I do like them with Tofutti singles. Generally, vegan cheese is well, rat nasty, but I think the bread and like 2 lbs. of margarine must help wrt to sandwiches or something.

Still, on my list of "things I wish were vegan"....

grilled cheese sandwiches, Sonic Style. Lots of gooey, nasty hot stuff (that might not even have actually been cheese, now I that come to think of it ), all sandwiched between two greasy slices of uber-thick Texas Toast.

I used to love grilled cheese sandwhiches. We called them "Cheese Toasties" growing up, heh.

But after going schmegan, I tried making one with the tofutti singles and about threw up... the "Veggie Slices" weren't much better. So I haven't had one since, although I did order one at Chicago Diner, but it ended up being more of a sandwhich with tons of stuff on it and a little bitty slice of vegan cheese, so that didn't count as Grilled Cheese to me. We never put anything else on our grilled cheese sandwhiches growing up, just toasted bread with margarine and some velvetta cheese. I hope to some day find Vegan Gourmet and try again.

^^ Cheese toasties hehe

You might like VG sandwiches, kpick. I also liked Velvetta (but I didn't eat it as often as other cheeses) when I was little, and I think VG compares well enough for me.

There's a pretty good vegan grilled cheese recipe in The New Farm Vegetarian Cookbook. When I make them, I use baked or fried tofu & a little extra mustard in the cheese sauce.

There is a place in New Jersey called The Pop Shop that serves 31 different types of grilled cheese sandwiches. They also serve vegan grilled cheese, milk shakes and whatnot. I have not been there yet, however, I am excited thinking about it.

i haven't had any grilled cheese sandwiches since I discovered tofutti slices contain hydrogenated oils. The only vegan gourmet we get here is mozzarella and nacho, neither of which would be quite suitable IMO. I may try one of the uncheese cookbook's recipes sometime. I used to love grilled cheese sandwiches back in the day.

Oh man! I love sharp cheddar and bread and then putting it into a sammich cooker (I don't remember the name of the gadget but it cooks up two sammiches at a time and cuts it down the middle on an angle. Anyway, some butter, sharp cheddar and tomato soup and I was the happiest girl alive.

Now that I am trying to be vegan I haven't had one in awhile.

My boyfriend loves american or muenster cheese with mustard and butter toasted. I have to say that is pretty tasty too!
