I'm going to post two different recipes. The first is the original, the second is my tweaking because I didn't have all of the ingredients.

Suitable for Vegetarian (I'm sure if you tweak it, it could be vegan).

3 ripe bananas
1 c. sugar
2 c. flour
1 tsp. baking powder
1 tsp. salt
2 eggs
1 tsp. baking soda disolved in 1 tbsp water
1/2 c. shortening
1/2 c. chopped walnuts

What I did:

3 ripe bananas
1 cup sugar
2 cups self-rising flour
1/2 cup shortening
1 tsp baking soda dissolved in water.

Mash the bananas and let stand for 15 minutes. Cream the shortening and sugar, add the eggs and beat well. Add the bananas, mix, and then the rest of the stuff minus the nuts and beat well. Stir in the nuts.

Pour into muffin tins or a bread pan that has been sprayed with Pam or coated with shortening. Bake at 350 for about 1 hour or so for the loaf - shorter for the muffins - maybe 30 minutes? Check to see if done by inserting a knife or toothpick in the middle (just like checking a cake).

Finished result (with a bite taken out of it).
