Cold-turkey-ing from veg to vegan. I have the next few days covered with quick-fixes, but eventually I'll have to cook.

Check out all the whats for dinner/whats for lunch posts! Tonight I had an veggie burger with fried onions and A1 sauce and for dessert I'll have a chocolate shake and it's all vegan! Basically... I eat everything. :p<br><br>

I wondered the same thing when I became a vegan. Luckily I do cook, and always have. What kind of stuff did you like to eat before? We can probably help you figure out veganize it, or come up with suitable substitutes. <img alt="" class="inlineimg" src="/images/smilies/smiley.gif" style="border:0px solid;" title=":)">

There are loads (and I do mean LOADS) of sites out there with vegan recipes - you could cook a new recipe every single day for the rest of your life and not run out of recipes!

Yeah just go to google and search your favorite recipes but vegan like, "Vegan egg salad recipe." That's what I did when I first started out.

Well, even before I went vegetarian about 7 years ago, we ate a lot of veggie meals, but it as easy to use cheese. So we ate things like spinach ravioli (spinach was mixed with four cheeses that kept it together), quiche, spaghetti (my dad refuses to put meat in any spaghetti sauce- it's an abomination), sushi, spinach stuff (creamed spinach with his garam masala). I'd love to veganize those things. But now that I think about, minus toppings, a lot of what he made was perfectly vegan. Black bean soup, samosas, the spaghetti was vegan....So I have a good list to start from.

Your recipes look so good. Last night I made the kale & mushroom stir fry, but I used konnyaku instead of the noodles. It was very tasty!

Nice! Sounds like you're on your way. A few ides:<br><br>
For the creamed spinach - how about coconut milk instead of the cream? That would go well with the Indian spices.<br><br>
I haven't found any vegan ravioli (although I really want to learn to make some!), but a good alternative would be lasagna or stuffed shells. You can do a tofu or cashew ricotta filling, along with spinach.<br><br>
Quiche - you can make quiche out of tofu. Here's an example: <a href="http://www.savvyvegetarian.com/vegetarian-recipes/spinach-tofu-quiche.php" target="_blank">Spinach tofu quiche</a>, or there is a recipe in the cookbook Vegan Brunch. I haven't tried making vegan quiche yet, but I really want to! I use vegetable shortening instead of Earth Balance for pie crusts.
