Assorted raw veggies with hummus as a dip.<br><br>
I love black beans and quinoa (substitute brown rice if quinoa is too difficult to find) with grape tomatoes, bell pepper (whatever color you like), corn, cilantro, onion and whatever spice I'm feeling that day.<br><br>
Pasta salad with lots of raw veggies mixed with an Italian type dressing. I like making it the day before as it seems to have absorbed more flavor by day two.
