Yea pasta is pretty good and easy... I love to thrown in a whole bunch of veggies to give it that extra kick... squash, broccoli, zucchini, and mushrooms...

Also making a veggies and tofu type of meal... mixed [frozen makes this almost too easy - hehe] veggies with small [too big and I find they fall apart easily] cubes of tofu [I love to 'marinate' them in olive oil, fresh lemon juice, pepper - I leave them sometimes for a couple days in the fridge and it gives them an amazing flavor]... But don't mix in the tofu w/ the veggies too long, just throw them in at the end to warm them up...

Good luck.

I agree with the pasta suggestions. You can even add in some veggie crumbles/balls.

You can't beat rigatoni or penne with an arribiata sauce. And some garlic French bread... TNS blends Earth Balance, fresh basil, and garlic together. Warm the earth balance and toss in a blender or food processor and blend. Allow to cool, and then spread on thick slices of bread right before you bake them in the oven. TNS used broil, which will cook them quickly. Otherwise, go with 450 F (I am not sure what the celsius equivalent is... Maybe 300?) and a little patience or a toaster oven.

Fajitas. Mmm. Use whitewave stirfry "chicken" (unless you're vegan, it has honey) if you're vegan, use morningstar farms steak or chicken mealstarters. Fajita mix, and frozen fajita veggies (onions, and different bell pepper strips) then get good tortillas ( I bought some organic spinach & veggie ones, they were green & pretty) salsa and better than sour cream. Mmmm.

How about:

Starter: Griddled aubergine and courgette slices, spread out on a beautiful platter with flatleaf parsley sprinkled over, olive oil, lemon and balsamic dressing drizzled over. Maybe throw on some delicious black olives and sundried tomatoes.

Main: Stuffed mushrooms (stuff with onion/garlic/chopped mushrooms/breadcrumbs and vegan cheese if you use it) with rocket salad and wild rice

Desert: A bowl of fresh raspberries (very romantic)

(Alternatively, scrap the starter and griddle slices of aubergine, courgette and mushrooms and stack them up on a bed of dressed rocket salad, then sprinkle over the vegan cheese and grill, throw over some flatleaf parsley and serve)

I think beautiful, simple vegan food would enchant the 'right' kind of lady. If she runs scared at the above, let her run and find someone with a little more magic and sophistication

While those do sound wonderful...to me... I would imagine there are many perfectly "magical and sophisticated" ladies out there who just don't happen to like eggplant or zucchini (aubergine and courgette - correct?) for whatever reason.

They may like plenty of other veggies just fine, don't dismiss someone on the basis of one or two food preferences.

Oh golly, I didn't mean he should dismiss someone if they don't like those specific things, at all I sort of meant the simple style of food... could be pleasing to anyone. I wouldn't judge anybody for what foods they liked or didn't like! I sort of thought he could impress her by using lovely natural things and taking care over presentation. When I serve omnis at parties they seem to react best to this approach, they usually assume I'm going to force-feed them mung beans...

I was going to suggest pasta, too.

throw in loads of yummy veggies and a tomato based sauce. And parmesan or vegan parmesan!

I don't know if you're vegan or not, but loads of omnis I know can't tell the difference between ice cream and tofutti versions, so if you want to make vegan food not seem too "different" and you want a REALLY easy dessert, get some.

Try QueenFluff's Vegan Alfredo Sauce

http://www.veggieboards.com/boards/s...ad.php?t=56788

Serve immediately as it is at its best when warm. I would definately suggest some sort of garlic bread and a yummy salad.
